At Umah Lusa, dinner often begins earlier than it seems, not in the kitchen, but in the ground. Cengkeh, our farm-to-table restaurant, is one of the clearest examples of farm-to-table dining in Bali, built around a simple idea that has become rare in the island’s more polished dining rooms: food should taste like the place it comes from. More than 80 percent of what reaches the table is grown within an hour’s drive of Munduk, much of it from our own farm and the smallholdings of neighbouring villages.

Vegetables are picked the same morning they are served. Herbs come from garden beds a short walk from the kitchen. Rice, greens, and seasonal produce arrive from farms in Tigawasa and the surrounding highlands, chosen not for consistency of supply but for what is genuinely ready to be harvested that week.

Munduk’s altitude and volcanic soil produce ingredients that taste different from what grows on Bali’s coast, brighter greens, more fragrant herbs, coffee and cloves grown in the same hills that surround the resort. Cengkeh’s kitchen leans into this rather than working against it, building dishes around what the land offers instead of importing flavours that belong elsewhere. Meals are seasonal, honest, and unhurried, closer to what a Balinese highland family might cook for guests than to a formal tasting menu.
